Chicken Shawarma Skewers with Salad & Tzatziki

Traditional chicken shawarma is well-marinated chicken, layered on a vertical rotisserie or spit, slow-roasted to perfection, then thinly shaved to serve. We have skewered the chicken in this recipe, to make it a quick mid-week dinner. Perfect for the BBQ or grill, with a healthy salad and refreshing tzatziki for dipping the chicken.
  • 3 of Chicken Thighs (skinless)
  • 1 of Lemon
  • 1 of Garlic Clove
  • 2 Tsp of Chicken Shawarma Spice Mix
  • 2 Tsp of Red Wine Vinegar
  • 1 75g Pack of Mixed Lettuce
  • 1 of Lebanese Cucumber
  • 120 g of Cherry Tomatoes
  • 40 g of Fetta Cheese
  • 80 g of Tzatziki
  • 6 of Wooden Skewers 6in

Prepare Chicken & Marinade:

Turn on the BBQ. Soak skewers in water to prevent them burning. Peel and mince garlic. Zest lemon and cut in half . Pat chicken dry with paper towel and cut into 2 cm cubes. Combine diced chicken with garlic, lemon zest and juice, shawarma spice mix, salt and pepper and 1 Tbsp olive oil in a bowl. Leave chicken to marinate for at least 10 minutes.

Prepare Remaining Ingredients:

Slice tomatoes in half. Halve cucumber lengthways and cut into 5 mm slices. Crumble fetta.

Skewer Chicken & Grill:

Remove skewers from water. Thread the marinated chicken onto skewers (discarding the marinade in the bowl). Grill the chicken on the BBQ. Turn the skewers occasionally, until golden brown and cooked through in the middle, about 10-15 minutes.

Dress Salad:

In a salad bowl, combine mixed lettuce, tomatoes, cucumber and crumbled fetta. Add red wine vinegar and 2 Tbsp olive oil and toss well.

You Plate It:

Divide chicken skewers between plates with salad and tzatziki on the side. Garnish with a lemon wedge. Enjoy!
