Crumbed Pork with Fennel, Potato & Apple Mash & Kale Chips

This recipe has texture galore! Creamy potato and apple mash served with fennel crusted pork and crunchy kale chips - delish! A great way to start your week right. Fennel seeds are are highly aromatic and flavourful, with a similar taste to anise and they pair perfectly with pork!

Crumb & Bake Pork:

Preheat oven to 220°C. Place the breadcrumbs, spice mix, salt and pepper in a large bowl and mix well. Pat pork dry on paper towel. Rub the mustard over pork and roll in the breadcrumb mix, pressing firmly. Place on a lined baking tray and roast for 20 minutes, turning halfway, until the pork is golden and cooked through.

Prepare Remaining Ingredients:

Peel potatoes and cut into 2 cm chunks. Peel and core green apple, and medium dice. Remove and discard kale stems, then tear into chunks.

Make Apple & Potato Mash:

Cover potato and apple with water in a pot and bring to the boil. Cook until tender, about 8-10 minutes. Drain, add butter and mash until smooth. Taste and season as required. Cover with lid to keep warm.

Bake Kale Chips:

Spread kale on a lined baking tray and toss with olive oil, salt and pepper. With 10 minutes remaining on the pork, add kale to oven, cooking for 10 minutes, until crisp on edges and slightly browned.

You Plate It:

Divide mash between plates and top with crumbed pork and kale chips on the side. Enjoy!
