Lamb Kofta with Hummus, Pitas & Ready Made Greek Salad with Red Wine Dressing

  • 150 g of Hummus
  • 300 g of Lamb Mince
  • 1 of Shallot
  • 1 300g Pack of Greek Salad (ready made inc. dressing)
  • 1 of Garlic Clove
  • 1 Tsp of Dried Oregano
  • 1 5 Pack of Pita Bread
  • 6 of Wooden Skewers 6in

Prepare Ingredients:

Preheat oven to 230°C. Peel and finely dice shallot. Peel and mince garlic.

Prepare Kofta:

In a bowl combine lamb mince with shallot, oregano, garlic, salt and pepper. Mix until well combined. Shape into 6 long patties (koftas) and insert wooden skewer into the centre of each end. Place on a lined baking tray and lightly drizzle with olive oil. Cook koftas in the top half of the oven for 10 minutes, turning halfway through cooking.

Warm Pitas:

Wrap the pita breads in foil and warm in the oven for 3-4 minutes.

Dress Salad:

Place pre-prepared salad in a bowl and dress with red wine dressing provided (to taste). Toss well.

You Plate It:

Serve lamb koftas with salad, warm pita and as much hummus as you desire. Enjoy!
