Lamb Kofta with Hummus, Pitas & Ready Made Greek Salad with Red Wine Dressing

- 150 Grams of Hummus
- 300 Grams of Lamb Mince
- 1 Shallot
- 1 300 Gram Pack of Greek Salad (ready made inc. dressing)
- 1 Garlic Clove
- 1 Teaspoons of Dried Oregano
- 1 5 Pack of Pita Bread
- 6 Wooden Skewers 6"
Prepare Ingredients:Preheat oven to 230°C. Wash the fresh produce. Peel and finely dice shallot. Peel and mince garlic.
Prepare Kofta:In a bowl combine lamb mince with shallot, oregano, garlic, salt and pepper. Mix until well combined. Shape into 6 long patties (koftas) and insert wooden skewer into the centre of each end. Place on a lined baking tray and lightly drizzle with olive oil. Cook koftas in the top half of the oven for 10 minutes, turning halfway through cooking.
Warm Pitas:Wrap the pita breads in foil and warm in the oven for 3-4 minutes.
Dress Salad:Place pre-prepared salad in a bowl and dress with red wine dressing provided (to taste). Toss well.
You Plate It:Serve lamb koftas with salad, warm pita, as much hummus as you desire and Enjoy!
