
Lamb Souvlaki Pizza with Fresh Tzatziki

Ingredients
- 1 of Pizza Base
- 60 g of Pizza & Pasta Sauce
- 100 g of Fetta Cheese
- 150 g of Lamb Mince
- 1 Tsp of Dried Oregano
- 1 Tsp of Smoked Paprika
- 1⁄4 Cup of Black Olives (sliced)
- 1 of Red Onion
- 1 of Lebanese Cucumber
- 100 g of Greek Yoghurt
- 1 of Garlic Clove
- 1 Small Bunch of Dill
- 1 75g Pack of Rocket
Recipe
Preheat Oven & Prepare Lamb:
Preheat oven to 220°C and spray an oven proof tray with non stick spray or line with baking paper. Meanwhile, heat a fry pan over medium high heat and sear the lamb mince, breaking it into small chunks with a wooden spoon. Add smoked paprika and a pinch of salt and fry for 1-2 minutes until browned. Set aside.Prepare Onion & Fetta:
Slice red onion (to taste, you will have left over onion) into thin slithers and crumble fetta into smaller pieces. Peel and mince garlic. Pick dill and finely chop.Cook Pizza:
Place base on oven tray and spread with pizza sauce. Evenly spoon on the lamb mince. Sprinkle over the fetta, red onion (as much or little as you like) and olives. Top with oregano to taste. Cook pizza for approx 10 minutes until crisp and hot.Make Tzatziki:
Grate cucumber and squeeze out excess moisture over a colander. Combine the cucumber and yoghurt in a bowl with the dill, garlic, salt and pepper to taste and stir well. Set aside until ready to serve.You Plate It:
Slice pizza and place on a serving plate. Dress rocket with olive oil and salt and pepper if desired and place on top of pizza with some big dollops of tzatziki. Enjoy!
