Roast Capsicum and Goats Cheese Pizza with Mushroom & Thyme

- 1 of Pizza Base
- 1 75g Pack of Baby Spinach
- 50 g of Soft Goat Cheese
- 60 g of Fire Roasted Red Capsicum
- 1 of Garlic Clove
- 100 g of Mushrooms
- 120 g of Mozzarella (Grated)
- 1 Small Bunch of Thyme
- 1 of Red Onion
Prepare Ingredients:Preheat oven to 220°C, allowing plenty of time to get nice and hot. Peel and mince garlic. Pick thyme leaves. Peel and thinly slice 1⁄2 of the red onion. Thinly slice mushrooms. Place pizza base on a baking tray. Drain any excess liquid from roasted capsicum.
Prepare Base:Brush pizza base with a little extra virgin olive oil and minced garlic. Sprinkle thyme leaves and mozzarella over the base.
Top & Cook Pizza:Scatter some spinach leaves over the mozzarella and add sliced red onion (to taste), mushroom, roasted capsicum and goats cheese (crumbling as you add).
You Plate It:Cook pizza in hot oven until topping is golden and base is crispy, 10-12 minutes. Remove, season with sea salt, freshly cracked black pepper and serve straight away. Delish!
