Smoked Chicken Pizza with Fire Roasted Capsicum, Basil & Cherry Tomato

  • 1 of Pizza Base
  • 30 g of Mayonnaise
  • 60 g of Pizza & Pasta Sauce
  • 1 Small Bunch of Basil
  • 100 g of Cherry Tomatoes
  • 50 g of Fire Roasted Red Capsicum
  • 1 250g Pack of Smoked Chicken
  • 100 g of Grated Pizza Cheese
  • 75 g of Rocket

Prepare Sauce:

Preheat oven to 250°C. Place pizza base on a baking tray. Spread pizza sauce evenly over the base and top with cheese.

Prepare Ingredients:

Thinly slice smoked chicken. Pick basil leaves, discarding stems. Halve cherry tomatoes.

Top & Cook Pizza:

Top pizza with smoked chicken (see tip), roasted capsicum, basil leaves and all but a few tomatoes. Season to taste. Cook pizza for 10-12 minutes until golden and crisp or cooked to your liking.

You Plate It:

While pizza cooks, toss rocket and remaining tomatoes with a little extra virgin olive oil. Flick mayo over cooked pizza, slice and top with rocket and tomato. Enjoy!
