Thinly slice cucumber. Slice spring onion on an angle. Peel and julienne or grate the carrot.
Tip! If you have time, you can pickle the carrot by adding 1 Tsp sugar and 1 Tbsp vinegar together.
Heat a pan over low heat, add the pulled pork and stir until piping hot. Add hoisin & soy mix and stir well to combine. Don't leave it unattended as the sauce will burn.
Tip! You can pop it in a microwave safe bowl, clingwrap and microwave if preferred.
Place bao buns on a microwave safe plate and cling wrap. Heat for 1-2 minutes (it will vary based on your microwave) until piping hot and soft.
Tip! You can steam these instead if you prefer to.
Serve the bao with a smear of mayonnaise inside then loaded with the pork, cucumber, carrot, and top with spring onion. Enjoy!
