Heat a pot on medium heat. Add chicken and half satay sauce (keeping the other half for dipping) and heat through until piping hot, about 2-4 minutes. Cut cucumber into small batons. Pick mint leaves and roughly chop, discarding stems. Slice red chilli.
Tip! Alternatively you can heat the chicken and satay sauce in the microwave.
Warm tortillas in the microwave for 15 seconds to make them easier to fold. Divide chicken, coleslaw, cucumber, mint, chilli and peanuts (keeping 1 Tbsp of peanuts for dipping sauce) between tortillas. Fold tortillas by folding down the sides and wrapping into a tight parcel, burrito style.
Tip! If you prefer less spice remove chilli seeds or leave out the chilli completely to make the meal kid friendly.
Top remaining satay sauce with chopped peanuts. Cut wraps in half. Divide wraps between plates and serve with satay sauce on the side for dipping. Enjoy!
