Heat oven to 200°C. Combine chicken wings with Cajun spice mix and a drizzle of oil. Mix well to combine and lay on a paper lined tray. Bake for 25-30 minutes turning half way through.
Tip! Cajun spice can be both spicy and salty, if you are sensitive to either only use half the spice mix. You can also add a drizzle of honey if you prefer a sweet/spicy coating on the wings.
Cut sweet potato into small wedges and toss with oil, salt and pepper. Place on a lined baking tray and cook for 20-25 minutes until tender and golden. Turn halfway if needed to brown evenly.
Cut cherry tomatoes in half. Dice Lebanese cucumber. Finely slice shallot and radish. Toss the prepared veg with the mixed leaves and dress with a drizzle of extra virgin olive oil, salt and pepper if desired.
Serve the wings with wedges, salad and chipotle mayo for dipping and have plenty of napkins!
