Step 1

1 Cook Rice

Pick coriander leaves and dice stems, discard roots. Heat a pot over medium heat. Add butter and melt. Stir in coriander stems, turmeric (small packet of spice) and rice. Add 112 cups water and bring to a boil, cover and reduce the heat to low. Simmer for 15 minutes until all the water is absorbed. Keep covered and let the rice absorb the water off heat.

Tip! Fluff the finished rice with a fork. Taste the rice, if it is still too firm, add a few more tablespoons of water.

Step 2

2 Prepare Ingredients

Peel and dice onion. Slice capsicums, removing the seeds. Roughly chop coriander leaves. Cut chicken into bite sized pieces.

Tip! When swapping the chef selected protein; adjust the cooking times and method to ensure your protein is properly cooked and therefore safe to eat.

Step 3

3 Cook Aromatics and Chicken

Heat a deepsided pan on medium high heat with a drizzle of oil. Add onions, cook for 2-3 minutes until translucent. Add chicken, curry powder & coriander mix, chilli flakes (to taste), ginger and garlic, and cook for 3 minutes. Stirring so all ingredients are coated in spice.

Tip! If you prefer less spice or to make the dish kid friendly, leave out the chilli completely.

Step 4

4 Add Capsicum and Tomatoes

Add tomatoes, capsicum, 12 cup water and stock, and cook for 6-8 minutes. Until the sauce thickens and the chicken is cooked through. Season with salt and pepper.

Step 5

5 You Plate It!

Divide rice and chicken jalfrezi between bowls. Garnish with coriander leaves. Enjoy!
