Chipotle BBQ Chicken Club Sandwich

Don't be afraid of a little heat. This club sandwich is a little twist on the traditional. Chipotle BBQ flavour adds some smokiness, add crunchy cos and then some BBQ mayo to top it off. All enclosed in a Turkish bun, delish!

Step-by-step instructions

First Things First

Our vegetables and fruit come as fresh as can be, so please give them a quick wash before you get started.

Step 1

1 Marinate Chicken

Preheat oven to 200°C. Slice the chicken breast in half cross ways so each breast gives 2 large pieces. Place chicken in a bowl with half the BBQ sauce and mix well to coat.

Tip! Marinate the chicken anywhere from a few minutes to a few hours.

Step 2

2 Prepare Remaining Ingredients

Combine remaining BBQ sauce (see tip) with the mayo. Slice tomato into thick slices. Slice buns in half.

Tip! The chipotle BBQ sauce has a little heat to it, so add as little or as much as you would like to the mayo.

Step 3

3 Cook Chicken & Bacon

Heat a pan over high heat, add a drizzle of oil and fry bacon until crispy. Set aside and keep warm. Using the same pan, cook the chicken for 2 minutes on each side or until cooked through.

Tip! Be careful adding the chicken as oil may spit. You can also cook on the BBQ if you wish.

Step 4

4 Toast Buns

Lay the buns cut side up on a baking tray. Toast in the oven (or under a grill if you have one) until bread is just toasted and heated through (see tip).

Tip! Buns can also be toasted in a toaster or dry fry pan.

Step 5

5 You Plate It

Spread the BBQ mayo on the tops and bottoms of the buns. Layer with lettuce, chicken, tomato and bacon. Place bun tops on and enjoy!
