Classic Cheeseburger Pickles & Roasted Sweet Potato Rounds

Who doesn't love a good ol' burger? Good quality beef, add some burger cheese, pickles (of course!) and a little sweetness from some roasted sweet potato rounds and you have a winner dinner.

Step-by-step instructions

First Things First

Our vegetables and fruit come as fresh as can be, so please give them a quick wash before you get started.

Step 1

1 Bake Sweet Potatoes

Preheat the oven to 200°C. Thinly slice sweet potato into thin rounds. On a lined baking tray, season sweet potato with salt and pepper and enough olive oil to coat. Arrange in a single layer and bake sweet potato for about 15-20 minutes or until browned.

Tip! Use an airfryer if available to reduce cooking time to 10-12 minutes.

2 Prepare Ingredients

Slice the hamburger buns in half. Slice pickle lengthwise. Slice tomato into rounds and roughly tear baby cos leaves.

Step 3

3 Make Burger Patties

While the sweet potatoes roast, combine the beef mince and garlic/onion powder in a bowl. Season with salt and pepper and mix thoroughly to combine. Divide to form 2 equal patties. Set aside.

Step 4

4 Cook Burgers

Brush both sides of burger patties with oil. Cook for 4-5 minutes each side until cooked almost through. Top with cheese slice and continue to cook in pan while cheese melts (see tip).

Tip! Place a lid on the pan once you have added the cheese, this will speed up the cooking process and melt the cheese better.

5 Toast Buns

In the same pan over medium-high heat, place the buns, cut side down and toast until slightly browned and warmed.

Step 6

6 You Plate It

Spread Dijon mustard & mayonnaise on the bottom of each bun. Top with lettuce, sliced tomato then a burger patty with melted cheese, pickles and spread tomato sauce on the underside of the top bun half. Serve with the sweet potato rounds on the side. Enjoy!

Tip! You can layer in any order you like - salad first or burger, it's your choice.
