Friday night cheat night made super simple! A little twist on the classic breakfast dish, with some wilted spinach and crispy bacon, topped with a couple of eggs - delish! Does that mean this could also be classed as a breakfast..? Maybe!

Get startedCook Bacon:
Preheat oven to 250°C. Cut bacon rashers in half. Heat a fry pan over medium heat, add the bacon and cook, turning occasionally, for 5 minutes or until bacon is crisp. Transfer to a paper towel-lined plate.
Wilt Spinach
With the same pan still on the heat, add spinach and cook, stirring, for 1-2 minutes or until just wilted.
Top Pizza & Cook:
Spread tomato sauce over pizza base and top with 3⁄4 of the grated pizza cheese, with more on the outer edges than in the centre. Spread wilted spinach and bacon over the top. Cut tomatoes in half, and scatter over. Carefully crack the eggs on the top, towards the middle of the pizza and sprinkle over the remaining pizza cheese.
You Plate It:
Place pizza in the oven on pizza stone or a baking tray and cook for 10-12 minutes until the base is browned and crisp, and the white of the eggs has just set. Remove from oven, give a generous season with salt and cracked black pepper. Dollop over hollandaise and enjoy straight away!
