Fast Pepperoni and Mushroom Pizza with Rocket

Preheat the oven to 220°C. Slice capsicum removing seeds. Slice mushrooms. Evenly spread sauce onto the pizza base. Sprinkle most of the cheese onto the top (keeping some for step 2).

Add pepperoni, mushrooms and capsicum. Sprinkle with remaining cheese. Place the pizza in the oven (on a lined baking tray, or directly onto a pizza stone if using). Cook for 10-12 minutes or until the base is browned and cooked through.

Lightly dress the rocket with olive oil and salt. Top the hot pizza with dressed rocket and serve at once. Enjoy!
