Filipino Noodles with Chicken Wombok and Snow Peas

Don't underestimate just how good this dish is going to taste. It's just like take-away but at home! It's so quick and easy but absolutely PACKED with flavour. Based on the classic Filipino pancit, this one-pan chicken and noodle dish only takes 25 minutes to prep and cook. Its nutritious with lots of veg and satisfying with family-friendly flavours.

First Things First

Large Frying-Pan or Wok

Step 1

1 Prepare Ingredient

Boil a kettle for step 2. Peel (optional) carrots and cut into batons. Peel and mince garlic. Peel and chop onion. Shred Chinese cabbage (wombok). Trim snow peas and cut in half. Pat chicken thighs dry and cut into bite sized pieces. Discard the roots of the spring onions and slice.

Tip! When swapping the chef selected protein adjust the cooking times and method to ensure your protein is properly cooked and therefore safe to eat.

Step 2

2 Cook Noodles

Place rice vermicelli noodles in a large bowl and cover with boiling water, making sure to submerge the noodles in the hot water. Cover the bowl and soak until just tender, about 4 minutes, then drain well.

Tip! The noodles will cook more in the sauce in step 5.

Step 3

3 Cook Chicken and Veg

To a wok or large frying pan over a medium-high heat, add a drizzle of oil. Add the chicken and cook for 2-3 minutes. Add onions and garlic to the pan and cook for 30 seconds. Add cabbage, snow peas and carrot to the pan and cook for a further 2 minutes.

Step 4

4 Add Sauce

To the pan, add chicken stock, 1/2 cup water, oyster/soy/brown sugar mix. Cook the sauce until simmering, about 1 minute.

Step 5

5 Add Noodles

Add the noodles to the pan and toss them through the sauce. Remove the pan from the heat. Allow to sit for 2-3 minutes to allow the noodles to soak up some of the delicious sauce.

Step 6

6 You Plate It!

Toss through the spring onions and lime juice (to taste) then divide Filipino noodles between serving dishes. Enjoy!
