Garlic steak fried rice is an elevated version of classic fried rice. Comfort food with a gourmet edge! Garlic perfumes the entire dish, as you cook the rice in the garlic oil. You also top the fried rice with crispy garlic pieces which adds texture and flavour.

First Things First

Step 1

1 Cook Rice

In a medium pot, add 112 cups of water and rice. Bring to a boil, cover and reduce heat to low. Simmer for 15 minutes or until all water is absorbed and rice is tender. Keep covered until ready to serve. Fluff the finished rice with a fork.

Step 2

2 Prepare Ingredients

Peel and roughly chop garlic (you want bigger pieces). Slice spring onion, keeping green and white parts separate. Cut ends off pak choy and roughly chop. Julienne or grate carrot. Scramble eggs. Slice chilli. Cut steak into 2cm cubes and coat in cornflour and 1 Tablespoon of oyster sauce mix.

Step 3

3 Fry Garlic

Heat a deep-sided pan or wok on medium heat with enough oil to cover the base. Add garlic to hot oil and fry until golden, about 1 minute. Make sure to keep an eye on the garlic, so it doesn't burn. Remove garlic and place on a paper towel.

Step 4

4 Start Fried Rice

In the same pan that you fried the garlic, increase heat to medium high. Add steak and brown, about 1-2 minutes each side and remove from pan. Add white parts of spring onion, 1/2 chilli and carrots, cook for 1 minute.

Step 5

5 Finish Fried Rice

Add rice, cook for 2-3 minutes. Move ingredients to one side and add the scrambled eggs, making sure to stir the eggs as they cook. Once the eggs are cooked, stir into the rice. Add peas, pak choy, steak and sauce. Stir to make sure all ingredients are covered in sauce and cook until all ingredients are warmed through, about 1-3 minutes. Season with salt to taste.

Step 6

6 You Plate It!

Stir through 1/2 fried garlic and 1/2 green parts spring onions into fried rice, keeping the rest for garnish. Divide fried rice into bowls and top with remaining fried garlic, spring onions and chilli. Enjoy!
