First Things First

Step 1

1 Make Pita Crisps

Preheat oven to 200°C. Tear 1 pita breads into chunks and spread on a lined baking tray. Spray with oil and season with za'atar spice. Bake for 5-7 minutes until browned and crispy.

Step 2

2 Prepare Kofta

In a bowl combine mince with garlic/onion powder and salt and pepper. Mix until well combined. Shape into 3 long patties (koftas) per person. Place on a lined baking tray and lightly drizzle with olive oil. Cook koftas in the top half of the oven for 10 minutes, turning halfway through cooking.

3 Warm Pitas

Brush or spray the remaining pitas with olive oil and wrap in foil and warm in the oven for 3-4 minutes.

Step 4

4 Make Salad

Slice shallot finely. Dice Lebanese cucumber and tomato. Pick and roughly chop parsley & mint. Toss salad ingredients with the pita crisps. Dress with red wine vinegar, olive oil, salt and pepper.

Step 5

5 You Plate It

Serve koftas with salad, warm pita, dollop of Greek yoghurt and as much hummus as you like. Enjoy!
