First Things First

Our vegetables and fruit come as fresh as can be, so please give them a quick wash before you get started.

As well as your basic cooking tools, you will need...

Baking Tray
Bowl
Oven
Frypan
Grater

Step 1

1 Prepare Ingredients

Preheat oven to 200°C. Cut sweet potato and carrot into 1cm batons. Peel red onion and cut in half. Finely slice one half of the onion, grate the other half for the patties. Peel and finely chop garlic. Pick flatleaf parsley and finely chop (discard stems).

Step 2

2 Make Fries

Place sweet potato and carrot onto a lined baking tray. Toss the sweet potatoes with a half the kofta spice, salt, pepper and olive oil. Roast in hot oven for about 20-25 minutes or until tender when pierced with a fork and golden. Fries can also be cooked in an air fryer at 200°C for 15 minutes, tossing frequently.

Step 3

3 Make Patties

Combine mince, grated onion, garlic, the remaining kofta spice and half of the parsley with a big pinch of salt and pepper. Mix well to combine. Form into patties. Heat a frying pan over high heat and cook the patties for 3-4 minutes each side or until cooked to your liking. Set aside to rest for 2 minutes.

Step 4

4 Make Yoghurt Sauce

Combine tzatziki with the remaining parsley in a small bowl and season to taste.

Step 5

5 You Plate It

Slice hamburger buns in half, layer with mixed lettuce, patty, and sliced red onion (to taste). Spread tzatziki on the lid of the bun and place on top. Divide sweet potato and carrot fries amongst servings and enjoy!
