Step 1

1 Prepare Ingredients

Preheat oven to 200C. Remove husks from corn. Using a large knife, slice corn cobs into rounds. Peel sweet potato and cut into 2cm dice. Quarter chat potatoes. Separate cauliflower into florets. Peel and cut onion into wedges. Remove leaves from thyme and chop. Peel and smash the garlic clove with the flat side of a knife. Do not chop the garlic.

Tip! Keeping the garlic clove whole but smashed will allow the garlic to flavour the veg without burning.

Step 2

2 Prepare Roasting Tray

In a large bowl, combine all the veg except spinach. Add thyme, smashed garlic, parmesan, drizzle some olive oil, salt and pepper and toss well. Spread onto a lined baking tray. Do not crowd the veg, if necessary use 2 or more trays. Add sausages to trays and place in the oven for 35 minutes, or until cooked. Turn sausages halfway to allow even browning.

Tip! If the roasting vegetables are too crowded on the tray they will steam instead of roast resulting in soggy veg.

Step 3

3 You Plate It!

Once the tray bake has been removed from the oven, toss through the spinach leaves. Divide the sausage and veg between serving plates and enjoy!

Tip! If you're swapping the chef selected protein; adjust cooking times and method to ensure your protein is adequately cooked and safe to eat.
