Slice brown onion and red capsicum finely. Heat a pan over medium high heat and add a swirl of oil. Fry veg for 8-10 minutes, stiring often until caramelised and golden. Season to taste.
Heat oven to 200 degrees. Combine beef mince, panko bread crumbs and egg with salt and pepper. Mix well and roll into 3-4 meatballs per serve. Heat a pan over medium high heat and add a drizzle of oil. Fry meaballs for 2-3 minutes per side until cooked through.
Tip! Make meatballs small enough to fit into the hotdog buns
Cut hotdog buns down the middle but not the whole way through. Spread with dijon mustard & mayonnaise on both sides. Load meatballs into buns, followed by onion and capsicum mix and swiss cheese slices.
Place buns on the oven tray and cook for 4-5 minutes until cheese has melted and buns are piping hot. Serve hoagies while still hot from the oven.
