Juicy chicken, tangy pineapple, spicy chipotle. A match made in heaven for all taco lovers with some sour cream, a sweet and salty street corn style salad and some creamy avocado.

First Things First

Slow-Cooker (Optional)

Step 1

1 Cook Chicken

Combine chicken thighs, pineapple, tomato paste and chipotle in a slow cooker with half a cup of water and cook for 4 hours on high or 8 hours on low or in a pot for 30 minutes. Once cooked shred chicken and taste, adjusting seasoning with salt and pepper.

Tip! Add half the chipotle if sensitive to heat.

Step 2

2 Prepare Ingredients

Finely dice red onion. Finely chop coriander including most of the stems. Peel the husk and silk from the corn and cut the kernals from the cob. Dice the capsicum. Dice the avocado.

Tip! You may not need all of the onion, use to your taste.

Step 3

3 Cook Corn

Heat a pan over high heat and add a drizzle of oil. Add the corn and cook for 2-3 minutes until just cooked and a little browned/charred. Set aside to cool for a minute before assembling salad.

Step 4

4 Assemble Salad

Combine corn, capsicum, onion, avocado and coriander. Toss gently and crumble through fetta.

Step 5

5 Grill Tortillas

Heat a grill pan over high heat and grill each tortilla for 10-15 seconds on each side until warmed through.

Serve chicken with tortillas and sour cream with corn salad on the side.
