Boil a kettle of water. Slice the spring onion keeping the white and green parts separate. Julienne the carrot. Cut the broccoli into florets. Shred the cabbage. Peel and mince the garlic and ginger. Slice the red chilli. Cut the chicken into bite sized pieces.
Place noodles into a heatproof bowl and cover with boiling water. After 2 minutes separate with a fork and leave to soak for an extra 3-4 minutes. Drain and set aside.
Heat a pan on medium high heat with a drizzle of oil. Add white parts of spring onion, garlic and ginger. Cook for about 30 seconds. Add chicken, cook for 2 minutes. Add cabbage, carrot and broccoli, cook for 3-4 minutes.
Add noodles and plum and soy sauce, toss or stir until all ingredients are coated in sauce and noodles are warmed through. About 2 minutes.
Divide noodles between bowls. Top with green parts of spring onions, fried shallots and chilli. Enjoy!
