First Things First

Our vegetables and fruit come as fresh as can be, so please give them a quick wash before you get started.

As well as your basic cooking tools, you will need...

Step 1

1 Prepare Ingredients

Peel carrot and shred or grate. Shred cucumber. Pick mint leaves. Mince garlic and chilli. Boil a kettle for step 2.

Tip! You can use a mandolin or box grater for the carrot and cucumber or slice by hand.

Step 2

2 Cook Rice Noodles

Place noodles in a bowl and cover with boiling water. Allow to soak for 5-7 minutes or until tender. Drain and rise under warm water.

Tip! The noodles can be served warm or cold, whatever you prefer!

Step 3

3 Marinate Veg

Combine the brown sugar, fish sauce and vinegar in a bowl and stir to disolve sugar. Add cucumber and carrot and leave to marinate.

Step 4

4 Cook Pork

Heat a pan over high heat. Add a drizzle of oil and cook the mince, breaking up with a wooden spoon for 3-4 minutes. Add the chilli, garlic and lemongrass and sweet soy and cook for a futher 2-3 minutes until browned and cooked through. Season to taste.

Step 5

5 You Plate It

Arrange the lettuce on serving plates, followed by the noodle and veg. Top with the mince and tear over the mint leaves.

Tip! You can use the lettuce to load up the filling if you like or you can chop it up and mix through the salad.
