Prosciutto & Parmesan Pizza with Rocket & Balsamic

An Italian pizzeria favourite, this pizza is ready in no time at all. A simple cheesy base is cooked to crunchy perfection, and then topped while hot with luscious slices of fresh prosciutto, simply dressed rocket and shaved parmesan. The perfect end to the week with a well-deserved glass of wine we think!

Ingredients

  • 1 of Pizza Base
  • 1 50g Pack of Pizza Tomato Paste
  • 50 g of Mozzarella (Grated)
  • 1 100g Pack of Prosciutto Slices
  • 1 120g Pack of Rocket
  • 35 g of Parmesan (Shaved)
  • 1 Tbsp of Balsamic Dressing
  • 1 Small Bunch of Basil

Step-by-step instructions

Step 1

Preheat Oven & Prepare Base:

Place a pizza stone (if using) in the oven and preheat oven to 250°C until nice and hot. Spread pizza base evenly with pizza tomato paste. Sprinkle mozzarella and 13 of the parmesan over the top and season with a pinch of salt and pepper.

Step 2

Add Some Prosciutto:

Add 12 the prosciutto to the pizza, roughly tearing as you add. Place pizza in the oven (on a lined baking tray if using, or directly on the stone) and cook for 10-12 minutes until the base is browned and cooked to your liking.

Step 3

Dress Rocket:

While the pizza is cooking, place rocket in a bowl and lightly dress with the balsamic dressing, seasoning to taste.

Step 4

You Plate It:

Top the hot pizza with remaining fresh prosciutto slices, basil (tearing leaves as you add), plenty of dressed rocket, and remaining parmesan. Slice and serve at once!
