This green veggie mashed potato is an easy way to add extra vegetables to your diet. Broccoli and peas are mashed right into the potato, it has more flavour and more nutrients than normal mash. Serve it up with the quiche Lorraine for an awesome dinner in under 15 minutes.

Preheat the oven to 200°C. Put kettle on to boil. Heat the quiche for 1 minute in the microwave. Transfer onto a lined baking tray and bake for 10-12 minutes.
Tip! Quiche can be reheated in an air-fryer for 5-6 minutes.
Cut potatoes into small 1 cm chunks. Cover with boiling water in a pot, add 1 Tsp of salt. Cook for about 8-10 minutes. Chop broccoli into small florets. Add broccoli and peas to the pot with the potatoes. Cook for a further 3-4 minutes, until veg is tender. Drain, add butter and roughly mash. Taste and season as required.
Divide quiche and veggie mash between serving plates. Enjoy
