Preheat oven to 200C. Remove ribs from packaging and place on a lined baking tray. Baste the ribs with 1-2 tablespoon of the BBQ sauce. Remove husks and silk from corn cob and cut in half then wrap in aluminium foil with butter, salt and pepper. Cook the ribs and corn in the oven for 15-20 minutes, until heated through.
Tip! The corn cobs can be microwaved for 2 minutes if you prefer.
In a bowl, mix coleslaw with the chipotle mayo. Taste and season with salt and pepper if required.
Slice the ribs and divide between serving plates along with the coleslaw and corn cobs. Serve with the remaining BBQ sauce.
