Baking Tray
Preheat the oven 200°C. Heat chicken and leek pies in the microwave on high for 1 minute. Transfer to a lined baking tray and bake for 10-12 minutes, until pies are crisp and golden. Toss the pepitas in olive oil and salt, place onto a lined baking tray and toast in the oven for 1-2 minutes.
Tip! The pies can be cooked in an air-fryer for 5-10 minutes.
Cut the tomato into wedges and slice the cucumber. Combine the mixed lettuce, tomato, cucumber and salad dressing (to taste). Season with salt and pepper.
Divide pies between plates and serve with salad on the side. Top salad with toasted pepitas. Enjoy!
