1 Small Bunch Coriander & Mint
1 Cup Baby Spinach
0.75 Cup Basmati Rice

Boil a kettle. In a pot, combine the rice, a pinch of salt and 11⁄2 cups boiling water. Bring to a boil, cover and reduce heat to low. Simmer 15 minutes. Cover pot and let the rice absorb any remaining water off the heat. Fluff the finished rice with a fork.
In a deep sided pan on medium heat. Add lamb rogan josh and heat through until piping hot, about 3 minutes. Stir in spinach and cook until wilted. Dice cucumber. Pick coriander and mint leaves, discarding stems.
Heat pappadams in the microwave on high heat for 30 seconds - 1 minute. Mix together cucumber, yoghurt and herbs to make the raita, season with salt.
Divide rice and lamb rogan josh between bowls. Serve with raita and pappadams on the side. Enjoy!
