80 g Greek Yoghurt
1 Each Lebanese Cucumber
1 Small Bunch Coriander & Mint
1 Cup Baby Spinach
0.75 Cup Basmati Rice
400 g Lamb Rogan Josh

Deepsided Pan
In a pot, bring 1 1⁄2 cup water and rice to a boil, cover and reduce the heat to low. Simmer for 15 minutes until all of the water is absorbed. Keep pot covered and let the rice absorb the water off the heat. Fluff the finished rice with a fork.
In a deep sided pan on medium heat. Add lamb rogan josh and heat through until piping hot, about 3 minutes. Stir in spinach and cook until wilted. Dice cucumber. Pick coriander and mint leaves, discarding stems.
Heat pappadams in the microwave on high heat for 30 seconds - 1 minute. Mix together cucumber, yoghurt and herbs to make the raita, season with salt.
Divide rice and lamb rogan josh between bowls. Serve with raita and pappadams on the side. Enjoy!
