Satay chicken noodle salad is everything you love about satay chicken.... in salad form! Colourful shredded cabbage, carrots, cucumber, noodles and delicious satay sauce. Finish the dish with some crunchy chopped peanuts and fresh chilli, yum!

Peel and julienne carrot. Shred cabbage. Thinly slice cucumber into rounds. Thinly slice chilli. Cut lime into wedges. Pick and chop coriander leaves. Thinly slice spring onion. Pat chicken tenderloins dry and slice into bite sized pieces. In a bowl, coat chicken in 1/4 of the satay sauce. Boil kettle for step 2.

Break instant noodle cake into quarters and place in a pot. Discard flavour sachet. Cook instant noodles with 2 cups of boiling water for 2 minutes. Drain noodles, rinse with cold water to stop the cooking process and set aside.
Heat a frying pan on a medium high heat and add a drizzle of olive oil. Add the chicken pieces and cook, turning frequently for 4-6 minutes or until chicken is cooked through.
In a large bowl, combine noodles, remaining satay sauce, chicken, cabbage, cucumber, carrot, spring onion, half the coriander leaves, a squeeze of half a lime and red chilli (to taste). Use tongs to gently combine.
Divide satay chicken and noodles between serving plates. Garnish with chopped peanuts and remaining coriander and lime wedges.
