You'll love this. Simple Mediterranean recipe with roasted beans, broccoli and tomato tossed in a light olive oil with garlic and chilli. A good handful of parmesan cheese and a squeeze of lemon finish the beans and veg. Add some gourmet WA sausages to this flavourful dish and you have a mid-week winner.

Step 1

1 Prepare Ingredients

Preheat oven to 200C. Chop broccoli into small florets. Peel and mince garlic. Cut cherry tomatoes in half. To make chilli and garlic oil, add 2 tbsp of olive oil to the chilli flakes (to taste) and minced garlic in a small bowl. Mix until well combined.

Tip! Adjust the amount of chilli flakes or leave out altogether to vary the heat for the dish.

Step 2

2 Roast Beans and Veggies

Drain and rinse the cannellini beans in a seive. Arrange the beans, broccoli and cherry tomatoes on a baking tray lined with baking paper. Drizzle over the chilli and garlic oil, salt and pepper. Toss to coat beans and veggies well. Bake for 20 minutes, tossing halfway through.

Step 3

3 Cook Sausages

Add a drizzle of olive oil to a frying pan on medium-high heat. Add the beef sausages to the pan and cook, turning frequently, for 15-20 minutes or until cooked through. Reduce the heat if sausages are burning.

Step 4

4 Finish Beans and Veggies

Remove roasted broccoli, tomatoes and beans from the oven and sprinkle with the parmesan cheese. Return to the oven for another 5 minutes until the cheese melts.

Tip! If your oven has a grill function turn it on to melt the chesse.

Step 5

5 You Plate It!

Remove the roasted beans and veggies from the oven and liberally squeeze over some lemon juice. Divide sausages, roast veggies and beans between plates and serve immediately.
