Boil a kettle. Trim sugar snap peas and cut broccoli into florets. Bring a pot with salted water to a boil. Add the broccoli and sugar snap peas, cook for 5 minutes. Meanwhile, place couscous in a bowl. Pour over 11⁄2 cup boiling water. Stir and cover with a lid and let stand for 5 minutes. Fluff the couscous with a fork and add butter, salt and pepper.
Cut top off pouch and stand pouch in the centre of the microwave. Heat on full power for 6 minutes and leave to stand for 2 minutes.
Divide the couscous and veg between serving plates. Top with the lamb shanks and gravy. Enjoy!
