Add egg noodles to a pot of boiling water. Cook for 5-6 minutes or until tender. Drain thoroughly and rinse under warm water to prevent the noodles from sticking. Slice the capsicum, removing seeds. Thinly slice spring onion. Slice pak choy, discarding the ends.
In a deep sided pan on medium heat with a drizzle of oil. Add capsicum, cook for 2 minutes. Stir in satay pork, cook for 2 minutes. Add pak choy and cook for 2-3 more minutes, until pork is piping hot.
Combine noodles and pork satay until noodles are coated in sauce. Divide between bowls and top with chilli flakes and peanuts. Garnish with the spring onion. Enjoy!
Tip! If you prefer less spice or to make the dish kid friendly, leave out the chilli flakes.
