Thai Basil Pork Stir Fry with Green Beans and Capsicum

This meal is inspired by a popular Thai stir fry dish Pad Gra Prao. Featuring minced meat cooked with holy basil, garlic, chilli peppers, and a savoury sauce. It's known for its bold flavours and is often served with jasmine rice and a fried egg.

First Things First

Step 1

1 Cook Rice

In a pot, bring 112 cups water to a boil. Stir in the jasmine rice. Cover with a lid and reduce the heat to low. Simmer for 15 minutes until all of the water is absorbed. Keep pot covered and let the rice absorb any remaining water off the heat. Fluff the finished rice with a fork.

Tip! Taste the rice - if it is still too firm, add a few more tablespoons of water.

Step 2

2 Prepare Ingredients

Peel and thinly slice garlic. De-seed and slice red capsicum. Pick Thai basil leaves. Trim ends of green beans and chop into 1cm pieces. Thinly slice red chilli on an angle (de-seed and use less chilli for a milder option).

Tip! When you're swapping the chef selected protein; adjust the cooking times and method to ensure your protein is properly cooked and therefore safe to eat.

Step 3

3 Cook Aromatics and Pork

Heat oil in a fry pan over medium heat. Add minced lemongrass, garlic and chilli and cook for 1 minute. Turn heat to medium high, add pork mince, breaking up lumps with a wooden spoon, cook for 3-4 minutes until pork is lightly browned.

Tip! Garlic and chilli can burn easily so make sure to watch the pan closely and stir.

Step 4

4 Add Veg

Add green beans and capsicum and cook for 1-2 minutes. Add oyster sauce and sweet soy and cook for 1 minute, making sure to stir so all ingredients are coated with sauce. Turn heat off and stir in basil leaves. Taste and adjust season as needed.

Tip! Basil should be slightly wilted.

Step 5

5 Cook Eggs

In a small frypan fry 1 egg per person if desired, try to keep a runny yolk.

Step 6

6 You Plate It

Fluff the rice and divide between plates. Top with pork stir fry and a runny yolked fried egg. Enjoy
