100 g Rice Vermicelli Noodles
1 Each Avocado
1 Each Carrot
0.12 Each Red Cabbage
0.75 Cup Edamame (Shelled)
1 Small Bunch Coriander & Mint
2 Tablespoon Peanuts (Chopped)
1 Each Lime
1 Each Red chilli
0.25 Cup Satay Sauce
1 Each Garlic Clove
1 Tablespoon Minced Lemongrass
300 g Beef Mince

Peel and dice garlic. Cut lime into wedges. Julienne or grate carrot. Remove avocado from the skin and slice. Shred cabbage. Pick coriander & mint leaves and chop, discarding stems. Slice chilli. Heat
Boil a kettle. Place noodles in a heatproof dish and cover with boiling water. Allow to soak for 8-10 minutes or until noodles are tender. Drain well and set aside.
Heat a pan on medium high heat with a drizzle of oil. Add garlic and lemongrass and cook for a few seconds. Add mince and brown, about 5-6 minutes. Season with salt and pepper.
In a bowl mix together satay sauce, a squeeze of lime juice (to taste), lime zest and most of the herbs. Season with salt to taste.
Divide noodles, mince, carrots, avocado, cabbage, carrots and edamame between bowls. Drizzle with satay sauce. Garnish with chilli and peanuts. Enjoy!
