Thai Chicken Pizza with Birds Eye Chilli, Oyster Sauce and Holy Basil

Spicy, sweet and punchy Thai chicken meets bubbly golden cheese and crisp pizza base in this fusion pizza. This meal will go from fridge to table in under 30 minutes with no sacrifice in the flavour department. If you're not a chilli fan reduce or drop the chilli and it will still be absolutely delicous and kid friendly.

Ingredients

  • 200 g of Chicken Mince
  • 1 of Bird's Eye chilli
  • 1 of Garlic Clove
  • 1 Small Bunch of Holy Basil
  • 3 Tbsp of Oyster/Fish/Soy (4-1-1)
  • 1 3g Pack of Sugar
  • 1 of Spring Onion
  • 1 of Pizza Base
  • 120 g of Grated Pizza Cheese

Step-by-step instructions

Step 1

Prepare Ingredients:

Preheat oven to 240°C. Mince the garlic and chilli to a paste. Pick the basil leaves, discard the stems. Trim and thinly slice spring onion. Line an oven proof tray with paper and place pizza base on top.

Step 2

Make Chicken Topping:

Heat a frypan or wok on medium-high heat with a drizzle of oil. Add the garlic and chilli paste and fry for 30 seconds. Add chicken mince and stir fry until cooked through. Add basil, oyster/fish/soy sauce and sugar. Stir fry until well combined.

Step 3

Assemble and Bake Pizza:

Spread chicken mix over pizza base, top with grated cheese. Bake for 10-12 minutes or until base is crisp and cheese is bubbling and golden.

Step 4

You Plate It:

Remove pizza from oven, allow to cool for a minute and slice into wedges. Serve with spring onion scattered over the top and enjoy.
