Orzotto is an Italian dish similar to risotto, but made with orzo (risoni) pasta instead of rice. The substitution of orzo allows for a quick, creamy-style dish without the time and attention risotto requires. In this incarnation of the social media 'Marry Me Chicken' trend, we have combined orzo, chicken, sun-dried tomatoes, spinach and mushrooms in a cream sauce, all cooked in one pan. Enjoy!

First Things First

Frying-Pan

Step 1

1 Prepare Ingredients

Slice mushrooms. Peel and mince garlic. Slice sundried tomatoes. Cut chicken into bite sized pieces.

Step 2

2 Cook Chicken

To a frying pan over a medium high heat add a drizzle of olive oil. Add chicken to pan along with mushrooms, garlic, sundried tomato and smoked paprika chicken spice mix. Mix together and cook for 3-4 minutes until chicken browns.

Step 3

3 Add Orzo

Add orzo (risoni) to the pan with the chicken. Mix to coat the grains in the spice and oils from the pan. Add 2 cups of water and stock concentrate and cook for 10 minutes, stirring frequently, until the water has been absorbed.

Step 4

4 Finish Orzotto

Add cream, most of the parmesan and the spinach to the pan and stir to combine and wilt the spinach.

Step 5

5 You Plate It!

Divide the Tuscan chicken orzotto between serving bowls. Garnish with any remaining parmesan. Enjoy!
