These Vietnamese smash tacos have the delicious flavours of Vietnamese cuisine with the fun of tacos. Crispy, savoury pork paired with fresh salad ingredients, the sweetness of lychees and the addictive flavours of nuoc cham.
6 Each Flour Tortillas (6in)
1 Tablespoon Minced Lemongrass
1 Each Lebanese Cucumber
1 Each Carrot
1 Small Bunch Coriander & Mint
1 Each Lime
70 g Fish Sauce/Rice Vinegar/Brown Sugar (1-1-1)
1 Each Red chilli
1 Each Ginger
50 g Lychees
75 g Baby Cos Leaf
300 g Pork Mince

Peel and mince ginger. Julienne carrot. Julienne cucumber. Quarter lychees. Zest lime and cut into wedges. Slice red chilli. Pick coriander and mint and dice, discarding stems. Shred cos. Mix together fish sauce/rice vinegar/brown sugar. lime juice from 2-3 wedges, most of the coriander and mint (save some for garnish) and chilli (to taste). Set sauce aside for step 4.
In a bowl season mince with lime zest, lemongrass, ginger, salt and pepper. Mix together properly. Divide mince equally between each tortilla, press the mince onto each tortilla covering the tortilla in mince. You will have a thin layer of mince on each tortilla.
Heat a pan on medium high heat with a drizzle of oil. Add the tortillas mince side down to the hot pan and cook for 2 minutes, flip over and cook for 1 minute on the other side. These will cook quickly and can burn easily so be sure to keep an eye on them.
Divide smash tacos between plates. Top with cos, carrot, cucumber, any remaining chilli and herbs. Dress with sauce and enjoy!
