A favourite quick and easy vegetarian meal that the whole family is sure to love. These fritters pack in a lot of fresh, healthy broccoli with some gooey melted cheese for good measure and cool creamy tzatziki for dipping. Dont forget about the sweet potato fries, high in fiber, antioxidants and beta carotene, yummy and healthy!

Step 1

1 Prepare Ingredients

Preheat oven to 180C. Finely chop broccoli into small pieces. Peel and chop garlic. Cut sweet potato in half and then again lengnthways. Cut 1cm slices of the sweet potato to make the fries. Try to make all the fries the same size as it will help cook them evenly.

Step 2

2 Bake Sweet Potato Fries

Place sweet potato fries on a lined baking tray and drizzle with olive oil and season with salt and pepper. Bake in the oven for 25-30 minutes until cooked through and beginning to brown.

Tip! When you add protein to this recipe; this step is a good place to prepare it and cook it properly to ensure it is safe to eat.

3 Prepare Fritters

In a large bowl, combine egg, self-raising flour, onion powder, chilli flakes (to taste), garlic and milk. Add the broccoli and grated tasty cheese. Season with salt and pepper.

Tip! Add some more milk or water if batter is too thick.

Step 4

4 Cook Fritters

Heat a frying pan on a medium high heat with a drizzle of oil to coat the bottom of the pan. Drop in 2-3 tablespoons of the batter to form a fritter. Cook on each side for 3-5 minutes. If the fritters are browning too quickly, turn down heat.

Tip! Cook 2-4 fritters at once depending on size of pan.

Divide fritters and sweet potato fries between each serving plate with a dollop of tzatziki for dipping.
