Seafood and Cajun cuisine go hand in hand and we have created this quick and delicious recipe inspired by the New Orleans and Southern cuisine. Juicy prawns, crunchy green beans, fresh sweet corn and fluffy couscous smothered in a garlic Cajun spice mix and on your plate in less than 30 minutes, yes please!

Boil a kettle for the couscous. Trim green beans. Remove and discard husks and silk from sweetcorn cob, cut off kernels and discard cob. Slice zucchini into 1cm rounds. Pick and roughly chop flatleaf parsley leaves, discarding stems. Mince garlic.
In a large bowl, combine 1 tablespoon of olive oil, garlic and Cajun seasoning. Add prawns and mix well. Set aside to marinate while you cook the veg.
Place couscous and chicken stock in a large bowl. Pour over 11⁄3 of boiling water. Stir and cover with a lid or cling wrap and let stand for 5 minutes
Drizzle olive oil in a pan over a medium-high heat. Saute green beans, corn and zucchini for 5 minutes. Season well with salt and pepper.
Mix the marinating prawns and then add them to the pan with the veg. Cook for the prawns and veggies for 3-5 minutes or until the prawns have turned pink and opaque.
Tip! If the pan is too crowded you can cook the prawns in a separate pan before combining with the veg and couscous.
Fluff the couscous with a fork. Add the prawns, veg and the parsley to the couscous and stir to combine. Divide the Cajun prawns and couscous between plates and enjoy!
