Is there any greater smell to make your tummy rumble than caramelised onions? This crisp tart combines sweet sauteed onions with a buttery filo crust for a light dinner that ticks all the boxes; healthy, tasty, quick and easy. We've topped the tart with some deliciously creamy fetta and a broccoli and snow pea almondine. Just delightful enjoyed with a crisp, cold white wine.

Preheat oven to 180°. Grease a small cake pan or baking dish. Slice red onion into thick rings (approx 2cm). Pick leaves from thyme, discard stalks. Cut broccoli into florets. Trim snow peas and remove tough string that run along the edge.
Tip! A small round cake tin (approx 22cm) is good for 2 serves. For 4 serve or a family serve you can use two small pans or a larger baking dish.
Heat a pan on medium high heat, add half butter and brown sugar and swirl to melt. Add the onion rings and reduce heat to low. Cook for 7-10 minutes until onion is starting to soften and has begun to colour. Add the sherry vinegar. Allow onions to cool while you prepare pastry.
Tip! Watch the temperature, don't let the onions catch or burn for the sweetest results.
Carefully unroll the filo pastry and cover with a damp cloth. Melt remaining butter in 10 second bursts in the microwave. Lay a sheet of filo on a clean board or bench and brush with butter, fold in half. Lay sheets in the cake pan, alternating so all the sides are well covered.
Tip! If you preferred, spray each sheet of pastry with an olive oil spray.
Sprinkle thyme leaves over the bottom of the pastry. Arrange onions neatly over filo. Fold the edges down neatly and fold them to create a rim. Brush with butter. Bake for 15 minutes until the pastry is crisp and golden.
Tip! When adding protein to this recipe, this step is a good time to prepare and properly cook your protein to ensure it is safe to eat.
Toast the flaked almonds in a dry pan for a few minutes until golden and fragrant. Add the broccoli to a pot of water and bring to the boil. Reduce heat and simmer for 3-4 minutes. In the last minute add the snow peas to the pot. Drain the veg and toss with any remaining melted butter, salt and pepper. Scatter with flaked almonds before serving.
Tip! Vegetables can be cooked in the microwave for 2-3 minutes if you prefer.
Carefully turn the tart out of the pan by running a knife around to loosen and invert on a plate, then place another plate on top and flip again. Crumble Danish fetta over the top and slice to serve alongside the veg.
Tip! You can serve it in the pan if you are nervous to flip it!
