Oven Trays

Step 1

1 Prepare Ingredients

Preheat oven to 200C. Remove outer green leaves from the cauliflower base. Use a sharp knife, place cauliflower stem side down on the cutting board and carefully cut into four, 2cm slices or "steaks". In a bowl mix together panko bread crumbs, dried oregano and parmesan. Cut the sweet potato into wedges.

Step 2

2 Bake Cauliflower

Whisk egg in a bowl. Spread panko bread crumbs on a plate Dip one side of the cauliflower in the egg and then the panko. Place cauliflower steaks on another baking tray lined with baking paper. Bake in the oven for 25-30 minutes or until golden brown and tender.

Step 3

3 Bake Sweet Potato Wedges

Place sweet potato wedges onto a baking tray lined with baking paper. Drizzle with olive oil and season with salt and pepper. Bake in the oven for 25-30 minutes or until golden brown.

Step 4

4 Make Salad

Cut cherry tomatoes in half. Create Lebanese cucumber ribbons with a peeler. Toss cherry tomatoes and cucumber with mixed lettuce and dress with Italian salad dressing.

Step 5

5 Add Topping to Cauliflower

Remove cauliflower steaks from the oven. Top each steak with generous spoonfuls of passata (enough to cover the cauliflower steaks) and mozzarella. Return the cauliflower to the oven for a further 5 - 10 minutes or until the cheese has melted.

Step 6

6 You Plate It!

Divide the cauliflower parmigiana, sweet potato wedges and salad between plates and serve immediately.
