Cajun prawns and chorizo tray bake is so incredibly easy that it makes a perfect weeknight meal! This is a healthy, delicious one-tray dinner full of juicy prawns, chorizo, crunchy sugar snap peas, sweet corn and chat potatoes. And its bursting with amazing spicy Cajun flavour!

Step 1

1 Prepare Ingredients

Preheat oven to 180°C. Slice chorizo thinly. Trim sugar snap peas. Place potatoes in a microwave safe dish and par cook on high in the microwave for 5 minutes. Allow to cool slightly and cut in half. Cut corn cob into 4 slices or cut kernels from the cob if you prefer. Pick coriander leaves, discard the stems. Cut lime into wedges. Peel and mince garlic.

Tip! To cut the kernels from the cob, stand cob upright and run a sharp knife from top to bottom.

Step 2

2 Prepare Tray Bake

Place defrosted prawns, chorizo, potatoes, corn and sugar snap peas in a bowl. Drizzle over olive oil, add garlic and sprinkle over Cajun seasoning (to taste - it is a little spicy). Season with salt and pepper, juice of half a lime, and mix to coat the ingredients with the seasoning. Place on lined baking tray. Bake for 25-30 minutes.

Tip! Use more than one tray if necessary to avoid overcrowding the ingredients.

Step 3

3 You Plate It!

Divide the chorizo and prawn tray bake between serving dishes. Garnish with coriander and the remaining lime wedges.
