Get startedRoast Potato Wedges:
Preheat oven to 220°C. Cut the potatoes into 1 cm thick wedges, drizzle with olive oil and season with salt. Roast the potatoes for 25 to 30 minutes, or until golden and cooked through.
Prepare Ingredients:
In the meantime, wash the fresh produce. Medium dice ½-¾ of the onion you will have leftover. Mince garlic. Roughly chop the parsley leaves, discarding stems. Drain and rinse the chickpeas.
Prepare Falafel Burgers:
Pat dry chickpeas with paper towel to remove excess moisture. Tip into a food processor along with the onion, garlic, parsley, falafel burger spice mix. Season to taste. Blend until fairly smooth, then shape into 4-6 patties, about 1 cm think. Tip: Do not over whiz the mix in the blender otherwise it becomes too crumbly after baking.
Bake Falafel Burgers:
Place the burgers on a lined baking tray, then add to the oven. Cook for about 12-15 minutes. In the meantime, grate the carrot and thinly slice the cucumber.
Toast Pitas Optional:
With 2 minutes remaining, place 2 pitas on a lined baking tray. Add to the oven, toast for 2 to 3 minutes, or until lightly browned and warmed through. Remove from the oven.
You Plate It:
Divide falafel burgers between plates. Serve with toasted pitas, tomato salsa, sliced cucumber, grated carrot and mixed salad alongside. Enjoy!
