First Things First

Our vegetables and fruit come as fresh as can be, so please give them a quick wash before you get started.

As well as your basic cooking tools, you will need...

Frying Pan

Step 1

1 Prepare Ingredients

Slice haloumi into 1cm thick slices. Cut lemon into wedges. Dice half red onion (you wont need all of it for this recipe). Pick coriander & mint and dice, discarding stems. Cut cucumber into ribbons. Dice peach. Preheat oven to 180C for step 4 (you can also warm the pita in a frying pan).

Step 2

2 Make Peach Salsa

Mix peach, fresh herbs and red onion (to taste) together. Season with salt and set aside.

Step 3

3 Cook Haloumi

Heat a frying pan on medium heat with a drizzle of oil. Add haloumi in a single layer and cook until brown, 1-2 minutes. Flip and repeat. Turn heat to low and add honey, chilli flakes and a squeeze of 3-4 lemon wedges. Switch heat off and mix sauce ingredients together, making sure haloumi is coated in hot honey sauce.

Tip! If you're adding protein to this recipe; this step is a good place to prepare and properly cook your protein ensuring it is safe to eat.

Step 4

4 Warm Pita

Place pita on a baking tray and warm in the oven for 3-5 minutes. Alternatively you can warm the pita in a clean dry frying pan for 1 minute per side.

Tip! Our pita has 5 per bag. You may not want to use all the pitas for this recipe.

Step 5

5 You Plate It!

Divide warm pita between plates. Spread tzatziki onto the pita. Top with rocket and cucumber ribbons. Add haloumi and drizzle over some hot honey sauce, and top with peach salsa. Serve with any remaining lemon on the side. Enjoy!
