Served with a fresh tomato salad, this dish really hits the spot. A roasted garlic vinaigrette finishes it all off beautifully. First Things First

Step 1

1 Prepare Pizza

Pre-heat oven to 200C. Place pizza base on a baking tray and spread pesto on top, leaving a small border. Slice bocconcini and scatter over pizza with grated mozzarella, parmesan and crumble blue cheese. Bake until pizza crust is crisp, golden and cheese is bubbling, 10-12 minutes.

Step 2

2 Dress Salad

Halve cherry tomatoes and add, along with mixed lettuce to the bowl. Dress with olive oil, salt and pepper and toss to combine.

Step 3

3 You Plate It!

Remove pizza from oven, slice and serve immediately with salad on the side. Enjoy!
