Crispy Chicken Bao Buns with Asian Slaw

A long time Chinese favourite, bao are steamed buns usually filled with succulent meat. In this recipe, crispy chicken and colourful slaw are stuffed into folded bao to create tasty little sliders. Steaming the buns gives them an irresistible soft bite which contrasts superbly with the crunchy filling.

First Things First

Step 1

1 Crumb Chicken

Preheat oven to 200°C. Mix 3 Tbsp hoisin & soy and 2 Tsp Sriracha (see tip) in a large bowl. Slice chicken into 2 cm strips, add to bowl with marinade. Place panko in another bowl, line a tray with baking paper. Working a few at a time, put marinated chicken strips into panko, press to stick and place on lined baking tray. Bake for 12 minutes.

Tip! Sriracha is quite spicy so add as little or as much as you prefer.

Step 2

2 Pickle Cucumber

In medium bowl mix sugar, 12 Tsp salt and 2 Tbsp rice vinegar. Thinly slice cucumber, add to bowl and combine.

Step 3

3 Dress Coleslaw

In a large bowl mix 1-2 Tbsp olive oil, remaining rice vinegar, remaining hoisin & soy and a pinch of salt to make dressing. Add Asian slaw and mix.

Tip! Use extra virgin olive oil if you have it, or even peanut oil if nobody has allergies.

Step 4

4 Warm Buns

Remove paper backing from bao buns. Place buns on a large plate, cover with cling film and microwave for 1 minute.

Step 5

5 You Plate It

Mix as much of the sriracha with the mayonnaise as you like (see tip). Spread a little of the mayonnaise onto each bao bun. Divide chicken between buns. Add 2 slices of cucumber, a little slaw and an extra drizzle of mayo (optional). Serve with remaining slaw on the side. Enjoy!

Tip! You can leave the mayo plain if you prefer.
