Who says lasagne is just for weekends? This speedy one-pot version gives you maximum flavour with minimal fuss. You combine juicy chicken thighs with mushrooms, sweet leeks, and crisp broccoli, tossing them in a beautiful white sauce made from butter, flour, stock, and thickened cream. Layered with pasta sheets and finished with a gooey dual cheese topper of mozzarella and parmesan, this dish is a warm, creamy hug in a bowl the whole family will love.
1 Each Leek
1 Each Garlic Clove
1 Tablespoon Chicken Stock Concentrate
150 g Thickened Cream
2 Each Lasagne Sheets Dried
75 g Mozzarella (Grated)
20 g Parmesan (Finely Grated)
30 g Butter (pantry)
1 Tablespoon Plain Flour
1 Teaspoon Dried Oregano
100 g Broccoli
70 g Mushrooms
300 g Chicken Thigh (Diced)

Oven Proof Frypan
Chop broccoli. Slice mushrooms. Dice leek. Finely Chop garlic. Mix the chicken stock concentrate with 1 and 1⁄2 cups of water. Break each of the lasagne sheets into 4 pieces.
Heat a deep sided pan with a drizzle of oil. Cook the chicken pieces for 4-5 minutes each side. Remove from the pan and set aside.
Place butter in the pan and fry the leek, mushrooms and garlic for 3-4 minutes until softened.
Pre heat oven to 200 degrees. Add the flour to the pan and stir until combined. Pour in the stock, thickened cream, oregano, broccoli, chicken pieces and lasagne sheets. Make sure the lasagne sheets are spread out over the pan and covered with the liquid. Place a lid on top and cook for 8-10 minutes. Stir the pan often to prevent pasta from sticking.
Remove the lid and add the grated mozzarella and parmesan. Place in the oven for 5 minutes or till the cheese has melted and golden in colour. You may want to transfer to an oven proof dish at this stage if required.
Divide the creamy one-pot lasagne between wide bowls, ensuring a good mix of silky pasta sheets, chicken, and broccoli in every serving. Ladle any remaining garlic cream sauce from the pan over the top and serve immediately while the cheese is perfectly melty. Enjoy
