Ginger Chilli Salmon with Noodles Inspired by Donna Hay

Inspired by Donna Hay, this recipe combines the strong flavours of sweet soy sauce, chilli flakes and ginger with the earthy tones of mushroom. These flavours combine perfectly with fresh salmon. Step 1

1 Prepare Ingredients

Peel and mince the ginger and garlic. Place the sweet soy sauce, garlic, ginger and 12 cup water in a bowl and mix to combine. Set aside. Cut mushrooms into slices. Trim Kai Lan and roughly chop, keeping the stems and leaves separate.

2 Cook Rice Noodles

Bring water to a boil in the kettle. Place rice noodles in a large bowl and pour the boiling water over them. Stir to loosen noodles. Allow noodles to soak until tender, about 10 minutes. Set aside.

Step 3

3 Prepare Salmon & Cook

Place chilli and 12 Tbsp salt in a small bowl and mix to combine. Pat salmon dry with paper towel. Sprinkle chilli salt (to taste) over the salmon fillet. Heat oil in a frypan over medium-high heat. Add salmon and cook for 3-4 minutes on one side, then flip for a further 3 minutes or until done to your liking. Remove from the pan and set aside.

Tip! You can season the salmon individually and to taste if not everyone wants heat.

Step 4

4 Start Mushrooms

In the same pan used to cook the salmon, add the mushrooms and Kai Lan stems over medium-high heat and cook for 4 minutes, until softened and golden.

Step 5

5 Add Greens & Sauce

Add the soy sauce and Kai Lan leaves and cook for 2-3 minutes or until the greens are wilted and sauce has thickened slightly.

Step 6

6 You Plate It

Top the drained noodles with the mushrooms, greens and salmon. Garnish with coriander leaves to serve. Enjoy!
